After promising my facebook peeps a few weeks ago... I'm finally posting it.
The BEST banana bread recipe... um... EVER! :)
I'm pretty much a banana bread snob. I can't STAND dry, flavorless banana bread! So if you're the same way, then you'll LOVE this recipe.
Before you scroll down to the bottom of the post and find this "butter-licious" recipe, let me just say...
"NO. This delicious, soft, addicting bread is NOT on your diet.
BUT...
Should you double the recipe, pretend you're going to give most of it away to friends and family, but then gobble down a few loaves yourself, because it's so amazing, that you can't stop eating it, ANYWAY?...... YES!"

Okay, so a few weeks ago Aubrielle and I decided to get down to business with a huge batch of over-ripe bananas, while the twins were at school. This little chick LOVES to help, anyway she can, so I enlisted her to be my "stir-er" and utensil holder.

Really. Besides measuring, you can't mess this up.
Dry ingredients in one bowl.
Wet ingredients in another.
Mix them separately... Then put them all together...
"And stir it all around... And that's. what. it's-all-a-bout!"
Who's doin' the hokey pokey with me, people?
The only "fussy" thing about this recipe is WHAT you cook it in.
You MUST... and I mean MUST... cook this banana bread in small loaf pans.
Don't ask questions... Just do it... mmkay? lol
I've tried cooking this recipe in a large loaf pan, and the texture doesn't come out nearly as amazing.
There must be something about the size, and ingredients that make those small loaf pans the perfect platform, for this delectable treat! :)
I got my small loaf pans at my local grocery store. 5 for $2.00.
Once you've sprayed them with nonstick cooking spray...
Start loadin' 'em up!
Fill them about 3/4 full of batter, like so.
And pre-heat your oven to 350 degrees.

Okay, so while we're waiting for our oven to pre-heat... can we just talk about how PRETTY and incredibly SMART the inside of my new oven is?
I know... right now you're probably thinking to yourself...
"Who knew that ovens could be pretty?"
Well... they can :)

Guess those Electrolux people didn't get the memo, that all ovens have to be that boring speckled gray color. hee hee. Anywhoo, it's just one of those fun "perks" that go along with this great stove.
Now for the more important, functional features, lol...
Check this out...
You know how when pulling out your racks, sometimes they stick and after a while, can become impossible to pull out, or push in, without shaking or spilling your food in the process?
Well, this oven, NEVER has that problem... because it has Luxury-Glide racks with a ball bearing system, so that the racks always extend smoothly and effortlessly!
Oooo.....Ahhhh.....
The racks are also made for supporting heavy duty items, like turkeys and roasts, so you can extend the racks out ALL the way to set things on them, and you never have to worry about the rack tilting, or giving out under your items.
AND... there's a nifty little slot for your potholder and hand to fit into, so that sliding the racks in and out is just THAT much easier!

So now, not ONLY do I have some seriously righteous banana bread, to snack on, giveaway, and freeze for later... but I also had happy twin faces, when they found out that their "oh-so-domestic-Mommy", had a warm yummy treat ready for them, when they came home from school that day.

I love when I see or hear the words "ball bearing." Totally reminds me of Fletch! I love a good banana bread recipe. I will have to try yours and see how it compares to mine. ;) One secret thing I love to do is dust the insides of the pans with a cinnamon sugar mixture. Sort of caramelizes while baking and makes them extra hard to give away. :)

ReplyDeleteOhhhh banana bread... love the stuff but hate bannanas.. figure that out! Love your oven, my friends got the same one and are also loving it.. the blue inside is sexy indeed! Alas it was not on the market when I bought my double oven 5 years ago.. it's a huge thing and I don't expect it to die anytime to soon.. but if it did... you know what I want :)

ok first of all, I was CRACKING up laughing when you said about baking a double batch, pretending to give some away but eating a couple loaves yourself, umm...yep! just did that the other day with pumpkin bread! haha! Oh and I totally know what you mean about the mini loaves, I have to do that with my pumpkin bread...makes it even easier to eat a whole loaf....or two! ;) This banana bread looks yummy! can't wait to try it!

I love banana bread and will definately try this recipe. I always make mine in those little foil loaf pans, my mom does too. For the life of me I can't get banana bread to cook right in a big loaf pan. Thanks for sharing the recipe.

I don't usually like banana bread but this recipe was delicious and easy too! I left my computer on last night with your blog and recipe on the screen. ReplyDeleteI would also like to add that we recently purchased nearly all Electrolux appliances in our kitchen(Built in Microwave, Oven, Warming drawer, Fridge, & Trash Compactor) and we especially LOVE their oven! Their Easy Glide system is a dream! It's so effortless that I can use my pinky finger to pull their racks in and out. I can't help but smile each and every time I use my oven! Not only is it pretty but it's easy to clean and change the racks around. If anyone is in the market for a new oven, I highly recommend Electrolux! In case you're wondering, I'm not a paid supporter of Electrolux, I'm just a very happy customer! :D

ReplyDeleteAs for the banana bread, well I have real buttermilk and ripe bananas at home. One thing I have to ask, your bread doesn't look.... dark. That is what I like about it! The outside is light and golden and the inside is light in color as well. Most of my banana bread turns out to be very dark golden on the outside (almost black on the bottom) and the inside is always that medium grey color.... It always tastes fine but doesn't look nearly as pleasing as yours. I am trying yours today!!!

Because I bought the small disposable ones at Wal-Mart today (and I even triple checked that they were smaller than the regular loaf pans and labeled small) and this definitely only filled up three loaf pans... I hope it turns out! Good thing my boyfriend and his roommates aren't picky :)

My boyfriend (a 23 year old red-blooded American college MALE, btw) told me "no offense, but it's better than your regular banana bread" and then told me that "it's really creamy and moist and gooey and has lots of banana flavor". I'll take it :) Thanks for the great recipe! It will be replacing grandma's.. shhh!

My 2 1/2 year old daughter's name is Aubrielle, too! Such a beautiful name! I've never actually seen anybody else with the same name (other than occasionally searching it on Facebook out of curiosity), although I know it exists.

We have that stove (but the slide in version with controls on the front) I ADORE IT!!!!!! I love the bread proof, the slow cook, the defrost, the dehydrate...I make yogourt in it, bread, I didn't buy a new slow cooker when it broke...

ReplyDeleteI can't even count how many times I've made this since I discovered it a few months ago. It's AMAZING!! Thank you for a great recipe. (And I'm too cheap to buy real buttermilk so I just add a little white vinegar to regular milk and it totally works).
ReplyDeleteI used petit épeautre (spelt flour) as it was all I had in the cupboard…and used two regular bread tins…but I experienced a major FAIL!!!…I so wanted this one to "work" based on it's rave reviews (and seeing your spectacular results!)..Perhaps it was the density of the flour?..The freshness of my baking powder/soda….my buttermilk which was, admittedly, two days past its' expiration date…not using small mini-pans?!…Most likely…ALL OF THE ABOVE!!…

Also..would you have an idea as to what the measurement would be for "4 large bananas"?…Would this be approximately one to one and one half cups…or 250-300 grams of purée or mash?..Thank you from France.
